Aiko was born Aiko Matsuo in Los Angeles on January 9, 1924. She moved to Fukuoka with her mother and 3 sisters after her father passed away in 1928. After attending grammar and high school in Fukuoka, she went on to Japan Physical Cultural College in Tokyo from 1939 to 1942 as a student in physical education. She then returned to Fukuoka where she taught physical education, gymnastics, dance, and basketball. She moved to Los Angeles in 1952, when she was awarded a scholarship to attend LA Technical College and received a degree in costume design. At the Technical College, she met and later married Shuichi Ito. Aiko and Shuichi began a restaurant business in West Los Angeles, Palms Fried Shrimp, which they owned and operated for over 20 years, before retiring. She enjoyed traveling with her husband on cruises around the world during their retirement and doting on their grandchildren. She and Shuichi lived in Culver City, Rancho Palos Verdes, Williamsburg (Virginia), Little Tokyo, and Arleta.
